ISHINE365 x Chocolate Pumpkin Seed Energy Bites
If you've never made your own energy bites, then you're seriously missing out! Not only are they delicious, but super easy to make and the perfect snack to grab on the go! I was inspired by Gimme Some Oven's no-bake energy balls, and decided to make my own variation for fall.
Ingredients
- 1 cup dry oats
- 1/2 cup peanut butter (or other nut butter of your choice)
- 1/2 cup ground flax seed
- 1/2 cup chocolate chip
- 1/3 cup pumpkin seeds
- 1/3 cup agave nectar (or honey)
- 1 tablespoon chia seeds
- 1 tablespoon cinnamon
- 1 teaspoon vanilla extract
Directions
Combine all ingredients in a large bowl and mix evenly. Let the mixture chill in the fridge for about 30 minutes. Once the 'dough' is ready, you can roll the mixture into balls of whatever size you'd like (I like mine about the size of a spoon scoop). Roll out the rest of the dough and store bites in the fridge until you are ready to eat.
