Cheers to Good Health & Roots 4 JUICE

Although personally I think it should be every month, March is National Nutrition Month and to that I say, CHEERS! On top of that, it is also National Save Your Vision/Eye Wellness Month, so I'm celebrating with a classic recipe out of my favorite juicing book, Juice, by Pressed Juicery.

Roots 4:

  • 4 carrots
  • 1 Fuji apple (or 2 small ones, since that's what I had on hand)
  • 1/4 inch fresh ginger, peeled

This carrot based juice provides loads of beta-carotene which your liver converts to Vitamin A, an essential vitamin for maintaining healthy eye sight. As an antioxidant, beta-carotene also helps to eliminate free radicals in the body, working as an anti-cancer agent. These sweet orange veggies also lead to healthier, more vibrant skin so be sure to grab an extra bunch or two next time you're at the market!
