Meal Prep - Easy Egg Bites
I’ve been trying to get more protein in my diet and making an effort to eat more eggs in the morning. The problem is, I hate having to do egg dishes every morning so I decided to start making batches every Sunday. I’ve tried a few variations of these now both in cupcake tins and in a baking pan, and I’ve found I prefer the latter.
Here’s what I did in this latest recipe (pictured) - minimal ingredients and super simple to make:
8 eggs + splash of milk, mix up like you would for scrambled eggs
Spinach
Onion, chopped
Cheddar cheese, I cubed mine but shredded would be good too
Preheat the oven to 375 and grease a 8x8 baking dish.
Wilt the spinach and saute the onion, then set in baking dish to cool.
Pour in your egg/milk mixture and sprinkle cheese on top. Add salt and pepper to your liking.
Bake for 23-25 minutes, let cool and enjoy or save for later.
Once cooled, I slice mine into 9 squares and store in the fridge for the next few days.
